Crockpot Chicken & Dumplings

Winter is still looming in the dark clouds that bring rain and blustery wind here in Texas. For these chilly days, I have a comfort food that not only fills your belly, but also satisfies all your wintery blues! I’ve been making a version of this recipe since I was around 8 or 9 and literally—no one else dares to make Chicken and Dumplings in my family! Upon moving to Texas and buying my very own crockpot, I decided to {Read More}

Crock-pot Homemade Vegetable Soup

I am currently fascinated with all meals cooked in a crock-pot. I purchased a lovely one at Wal-Mart before Christmas and have since used it multiple times making dishes that I once thought could only be made on the stove. I will share my famous Chicken and Dumplings recipe soon! 1 big container of vegetable stock Salt, Pepper, Garlic Powder, and thyme to taste 1 lb. ground beef, cook separately then add to crock-pot 1 package celery (I used the {Read More}

Crockpot: Southern Pulled Pork BBQ Sandwiches

My family absolutely loves this melt-in-your-mouth tangy pulled pork. This recipe is one of my go-to weeknight favorites, and I always have some on hand. It has just the right amount of tang to eat plain, on a bun, with a little bit of the vinegar-based juices drizzled on top. The next night we use the left over buns and change up the sandwich by adding our favorite bottled BBQ sauce on top. We also love this pork on soft {Read More}

Grandma’s Steak & Potatoes Crockpot Casserole

Some of my earliest memories are of eating Sunday lunch with my Grandparents at May’s Restaurant in Winfield, Alabama. I always chose the same thing from the buffet line: country fried steak, mashed potatoes, English peas, and a dinner roll. Years passed, May’s closed, and Grandma was given a steak and potato crockpot recipe that became her favorite. She loved making this casserole because she could adjust the amounts easily for her and Grandpa. If she told me once, she told me a {Read More}

Cuban for Dinner

My family of picky eaters fell in love with Cuban food last year. From black beans and rice, plantains,  to traditional Cubano sandwiches, we love our Cuban. Imagine my surprise when a friend shared a recipe for Cuban pork that looked easy for this culinarily-challenged gal to make. I popped the roast in the oven when I realized I had not read the instructions far enough to know it was (originally) a crockpot recipe. Looking down the barrel of a {Read More}
