Crockpot Chicken & Dumplings

Winter is still looming in the dark clouds that bring rain and blustery wind here in Texas. For these chilly days, I have a comfort food that not only fills your belly, but also satisfies all your wintery blues!

I’ve been making a version of this recipe since I was around 8 or 9 and literally—no one else dares to make Chicken and Dumplings in my family! Upon moving to Texas and buying my very own crockpot, I decided to try this tried and true dish in a slow cooker and I’ve never looked back since. I made this dish for my Sunday School Potluck and lets just say that only a few got some before the bottom of the pot was seen. I’ve since shared this recipe with many friends and I am now sharing my “secret” recipe for homemade chicken and dumplings with you.

Crockpot Chicken and Dumplings
Crockpot (5 quart)
2 cans cream of chicken soup
1 cooked chicken (You can use any chicken—I usually cook a whole chicken in the crockpot and save the broth, which I use all of in the making of this recipe. If you don’t have any homemade broth, add 2 cans of broth. The benefit to cooking your chicken in the crockpot is that it literally falls off the bone, it’s so tender!)

Add cream of chicken, broth, and chicken to crock-pot. Cook on low for about 5-6 hours or on high for about 3-4 hours.
Dumpling Recipe:
2 cups flour
1/2 tsp. salt
1/2 tsp. baking soda
3 Tbsps. Crisco
1 cup buttermilk

Add dumplings to the soup mixture. They can be big or small dumplings and you can make them round or flatten them.

Turn crockpot on high and cook dumplings in soup for an hour. Stir a few times before done. Add salt, pepper, and parsley to taste.
