When I say 2 ingredients, that’s exactly what I mean. Just pineapple and a few mint leaves will combine to create a beautifully refreshing summertime pineapple sorbet the entire family will love.
1 large can (in its own juice) or half a fresh pineapple
A few mint leaves
Here’s how to make 2 ingredient pineapple sorbet:
Drain the can of pineapple (use the juice for another recipe or drink it). Or, chop up fresh pineapple. Either way, put it in an ovenware glass bowl in freezer (about 2 hours to freeze).
When it’s frozen, use a hand blender or food processor to blend. You might want to freeze a second time.
If you’re using fresh pineapple, blend first and freeze after. It seems to work better. Or, do before and after and freeze again.
Place in small bowls or ice cream cones and top with a mint leaf.
Serve right away or put back in freezer.
