Kellie’s Apology: Page sent in a series of mouth watering Super Bowl snack recipes and well, I dropped the ball. I did not get the recipes posted before the big game! All of her recipes will be wonderful additions to any party or fun family night — and perfect for next year’s Superbowl.
Spicy Tortilla Roll-Ups
6 flour tortillas
8 oz. softened cream cheese
1 tablespoon mayonnaise
1 cup mild cheddar cheese
1 small can of chopped black olives
1/4 cup chopped fresh jalapeno pepper (I use a little more to add more spice)
1/4 cup chopped green onion
1 package deli meat (ham or turkey)
Combine cream cheese, mayonnaise, cheddar cheese, olives, jalapeno peppers, and green onion to make a paste. Using one tortilla at a time cover with paste, then top with a piece or two of meat.
Roll it up and secure with a toothpick.
Continue until all tortillas are used. Place into an air tight container until ready to serve. Cut into pinwheel slices to serve.
