How to Can Homemade Sweet Pickles

If you’ve ever wondered how to ‘can’ homemade sweet pickles, let me show you how today. Sweet pickles are easy to make: five ingredients and taking only three days start to finish. Great in relish, chicken or tuna salad, sweet pickles are marvelous on the side of any good sandwich for lunch too. Instead of reaching for the store bought version, make you own!

Canned 3 Day Sweet Pickles

Fresh cucumbers are easy to find right now at any local farmer’s market if you did not grow your own.

Three Day Sweet Pickles
8 lbs cucumbers
1 cup pickling lime
1 quart vinegar
5 lbs sugar
2 Tbls pickling spice

Day 1:
Slice cucumbers into medallions.
Mix 1 cup of lime with water to make a thin paste. Pour over pickles.
Add enough water to cover cucumbers and allow to sit overnight.

Large fresh garden cucumber.

Day 2:
Drain and wash cucumbers in cold water 2 times making sure lime is rinsed away.
Cover in ice water for 2 hours.
Drain ice water and make spice mixture using 1 quart vinegar, 5 lbs sugar and 2 Tbls pickling spice.
Cook over medium heat until it is clear. Pour over cucumbers and allow to sit overnight.

Day 3:
Cook cucumbers over medium heat until translucent.

Stock pot filled with simmering cucumbers / soon to be sweet pickles. Day three of pickling process.
While cooking cucumbers, prepare jars by bathing them in boiling water; covering tops by 1 inch with water.
Prepare lids and rims in boiling water as well.

When cucumbers are translucent, fill jars with pickles and add juice to within one inch of the top.
Immediately seal with lid and rim.
Pickles will seal as they cool. If they do not, put them back into the hot water bath. (Just be sure the jar is sealed and then boil the filled jar completely submerged in water for about 20 minutes so that contents get hot. Remove jar from water and the jar should seal. You know a jar is sealed when the center of the top clicks down and is no longer moveable. They sound like tops popping as they seal. I rarely have to do the boiling when the contents are hot when you place them in the jar.)
