Favorite Christmas Gingerbread

My family’s favorite Christmas gingerbread can be eaten as a snack, dessert, or even as a yummy breakfast treat!

Spray an 8 x 8 pan with non-stick coating. Preheat oven to 35oF.

Mix together:
1 stick softened butter
2 eggs
1/2 cup unsweetened yogurt or sour cream
1 tsp. vanilla
2 cups whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon
1 cup maple syrup
1/2 cup molasses
1 cup applesauce
1/2 tsp. salt
1 tsp. ginger

Pour into the prepared pan after mixing well.  Bake at 350F for 40 minutes or until set in the center.  I frequently double this recipe for my large family, as it never lasts long!
