Cake Mix Cookies

Chocolate Chip cookies made using cake mix.

Be your own creative genius by using a basic recipe for cookies that uses a cake mix. You choose the flavor cake mix, add the eggs and shortening plus your choice of add-ins (1 to 1 and 1/2 cups). The variations are endless. Think white cake mix with red M&M’s for Valentine’s Day or chocolate cake mix with mint chocolate chips for St. Patrick’s Day. Then of course there’s the variety you could make with peanut butter chips or toffee brickle chips. Have fun choosing!

Ingredients for cake mix cookies.

Cake Mix Cookies (makes 3 and 1/2 to 4 dozen cookies)

1 box cake mix
2 large eggs
1/2 cup vegetable oil OR 1 stick butter or margarine, softened + 2 Tbsps oil

Preheat oven to 350 degrees.

Place cake mix, eggs, softened butter and/or oil  in large bowl. STIR with spoon until thoroughly blended. Stir in whatever add-in you’re using.

Drop by level measuring tablespoon onto greased baking sheets.

Bake at 350 for about 8-10 minutes. Make sure cookies are done but not over-baked. (Some add-ins may mean baking takes a little longer.) Cool 2 minutes on baking sheets. Remove to cooling racks and cool completely. Store in airtight container.

(If dough is very stiff you can make little balls with dough and set on ungreased cookie sheets. )

Possible add-ins: 1 cup semi-sweet chocolate (or other flavored chips) + 1/2 cup chopped pecans or walnuts OR Chopped maraschino cherries + coconut

Oatmeal cookies: Use spice cake mix as above plus 1 and 1/2 cups oatmeal as the add-in.

Sugar-cinnamon: Dip  cookie dough balls (made with a yellow, white, or French vanilla cake mix) in a sugar-cinnamon mixture before baking.
