Terry’s Chicken

My mother has this really neat cookbook she got a long time ago, I don’t know exactly how long ago, but it was around while I was still a teenager and that was twenty years back. She would add the recipes along with her personal notes. I’ll always remember the comment to the side of this particular recipe “Terry’s favorite, men love this.”  As an FYI, women love this too, as do kids of all ages. It was written for chicken wings or little drumettes and served as an appetizer or finger food, but I have adapted it to a main dish using boneless skinless thighs and serving the sticky sauce over rice.

1/2 cup honey

1/4 orange juice

1/4 soy sauce

1/4 ketchup ( for a spicier version use Sriracha sauce)

1 tablespoon garlic powder

2 teaspoons ground ginger

2 teaspoons cooking oil (I use canola)

3 pounds boneless skinless chicken thighs

Preheat oven to 425, and grease or use cooking spray in a 9×13 pan.

Mix honey, orange juice, soy sauce, ketchup, ginger, garlic and oil in a large bowl, add chicken and toss to coat. Place chicken and sauce in prepared pan. Cook at 425 for about 30 minutes, turning chicken pieces occasionally and spooning sauce over each piece. Turn oven to broil and continue cooking for about 8 to 10 minutes until edges of chicken begin to darken.

Serve with rice and use extra sauce as gravy.
