This is a quiche even my kids like because it contains two of their favorite ingredients–cheese and bacon. It’s quick to put together and pop in the oven before the kids are even up. It’s not an everyday breakfast, just a nice treat and change up to our regular menu.

1 frozen pie crust, do not thaw
4 oz shredded cheese of your choice, more if you like
4 slices of cooked and crumbled turkey bacon
3 large eggs
1 1/2 cups of half and half
Salt and Pepper to taste.

Put shredded cheese in pie crust. I use whatever is on hand, and often fill the crust half full of cheese. In a bowl, stir together eggs, half and half, salt and pepper. Pour into crust. Crumble bacon into mixture.

Bake at 375 degrees for 45 minutes or until inserted knife comes out clean. Allow to sit for a few minutes. Serve warm.
