2. Carrot Cake. I made this for my son’s 21st birthday and it turned out wonderful. My picture isn’t as pretty as others, but don’t be fooled — it tasted great! The recipe calls for a white chocolate icing that requires six (yes, I said six!) sticks of butter. I opted to make a traditional cream cheese icing. Much cheaper and tasted yummy. This would be wonderful for Thanksgiving and may make a reappearance on my holiday table.
