Healthy Strawberry Muffins

I love this recipe for the sheer fact that it’s brilliance. Muffins in a healthy form! I originally got this recipe from Pinterest, but added a couple different ingredients. This recipe is so simple, quick, and perfect for the single lady or the mom looking for a quick breakfast.

Healthy Strawberry Muffins
Makes 10 muffins

1 ¼ cups all-purpose flour, I used whole wheat flour
2 Tablespoons ground flax seed
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ cup granulated sugar
¼ cup light brown sugar, packed
½ + 2 Tablespoons unsweetened applesauce
1 egg white, beaten
2/3 cup diced strawberries
1/3 cup mini chocolate chips

Preheat oven to 350F degrees. Spray 10 muffins tins with nonstick cooking spray.

Combine flour, flax seed, baking soda, and cinnamon in a bowl and set aside. In a separate bowl, combine brown sugar, granulated sugar and applesauce until there are no sugar lumps. Add the egg white and stir. Add the wet ingredients to the dry until just combined—do not over mix. Fold in the strawberries and chocolate chips.

Divide the batter evenly into 10 muffin tins. Bake for 20 minutes. Allow muffins to cool and enjoy!

Muffins will stay fresh in an airtight container at room temperature for 7 days. Muffins can also be frozen.
