Better-For-You Oatmeal Cookies

I grew up on cookies made from Better Homes and Gardens recipes. That old pink gingham cookbook was a staple at our house. Times have changed and my family is more health conscience. I wanted to present an old-fashioned favorite without all the unnecessary fats and sugars. So I tweaked that old book’s oatmeal cookie recipe. One of the joys of being an adult cook is that if you don’t like raisins, as I don’t, you simply omit them! The {Read More}

Southern Coconut Cake — the Secret Recipe

Spring has officially arrived for me with the making of coconut cake.  Homemade from scratch coconut cake is a Southern classic that compares to no other dessert. Secret recipes for coconut cake within families are as tightly held as the recipe for perfect fried pies (a post for another day). Today’s recipe is not the typical seven-layer cake, it’s an updated sheet cake version my Mom, Grandmother, every aunt, and most of the church ladies growing up made. Easier, faster, {Read More}

Red Velvet Chocolate Chip Cookies

A while back, I was sitting in one of my classes, Spiritual Formation to be exact, where we were all sharing special traditions. One lady explained how her mother would make cookies every Sunday afternoon to put in her children’s lunches all week. I was fascinated, what a glorious tradition! The Horner Homemaking House, where I live and work at Southwestern Baptist Theological Seminary, has a ministry of offering beverages and cookies to guests who arrive to fix appliances, make {Read More}

Sherbet in Lemon Shells

  Here’s an easy, refreshing summer treat–sherbet with a lovely, lemon twist. Sherbet in Lemon Shells Purchase one lemon per person. 1. Cut off the top of each lemon about one-fourth of the way down. 2. Cut a thin slice from the bottom of each lemon, so it’s flat and will stand up. 3. When it’s too Hot for S’mores: Marshmallow Pops

My kids love marshmallows, but it’s way too hot in Georgia to think about starting the fire pit. A fun alternative to s’mores any day of the week is marshmallow pops. Remember back in June when I shared cake pops? Well, I had plenty of lollipop sticks and melting chocolate–marshmallow pops were a perfect creation. The above photo shows the nice ‘clean’ marshmallow pops before an unnamed child shook the freezer bags thus coating the pristine white of the marshmallows {Read More}

Mint Chocolate Cake Pops

For my daughter’s birthday I tried my hand at cake pops. They were a fun challenge for someone who is not gifted with cake decorating skills. The cake part was easy, the chocolate coating processing was a challenge. I never did figure out how to make the coating smooth and seamless. (Suggestions?) On a good note, it did not affect the taste of the chocolate one bit! This recipe made enough for the party with leftovers going back into the {Read More}
