Homemade Shrimp Bisque

Homemade shrimp bisque is the perfect soup for a chilly fall evening.

Shrimp Bisque
1 onion chopped
2 Tablespoons margarine
8 oz. cream cheese
2 pounds shrimp
2 cans Rotel tomatoes
16 oz. Velveeta cheese
4 large potatoes cubed and cooked until soft
2 cans corn drained
1 cup half and half

Saute’ chopped onion in 2 tablespoons margarine. Add shrimp and cook until pink. Combine with 8 oz. cream cheese and cook until smooth. Add Rotel, Velveeta, potatoes, corn, and half and half. Cook until smooth stirring frequently it will scorch on bottom quickly.
