While I cannot offer cooler days, I can announce that Mentoring Moments will be celebrating Christmas in July! Well, I am the fortunate owner of this great cookbook already. I absolutely love it. My daughters-in-law and I pour over it for Sunday dinners. I decided that since this is a Christmas in July idea that I would enter to win a copy for one of my daughters-in-law for this Christmas! Give yourself a break and enter to win. With all this hot weather crockpotting is the way to go.
I have a WONDERFUL sloppy joe recipe for the crock pot and a delicious spaghetti sauce one too. I used to use the crock pot every Sunday, but have gotten out of the habit. May have to get back to it!

I just “Liked” Chery’s facebook page and am forwarding this on to my best friend who is newly married and in love with her crock-pot, too!
I have a wonderful Crockpot Lasagna recipe that doesn’t need the noodles to be precooked. It’s just as tasty as the original and so easy that I don’t make Lasagna the old way any more!
Pot Roast would have to be my favorite crockpot recipe.
Cut up 4 potatos, 2 stalks celery, 1/2 onion, and 3 carrots. Place on bottom of crock pot. Mix some chopped garlic and creole seasoning and stuff into roast by slicing small slits into roast. Pan sear and place on top of veggies. Mix one can (I like the healthy request versions) of cream of mushroom soup with 1/2 can water or beef stock and cook on low 8 hours. Yum!!!

I just started using the disposable bags that line the crockpot. What a cleanup time saver.
Newest favorite crockpot recipe is this:
2 frozen chicken breasts
1 can of corn, drained
1 can of Rotel tomatoes
1 can of black beans, rinsed
8 oz cream cheese
Cook on low for 6 hours. Shred chicken with 2 forks and mix all ingredients together in pot. Let set until thickened.
We love this either on taco chips or wrapped in a tortilla with sliced black olives. So yummy!

My favorite recipe is throwing in chicken with salsa, corn, black beans and after it cooks serving it with shredded cheese and tortilla chips. I love how the chicken comes out.

I got a crock pot and look forward to using it this summer to beat the heat – great idea! The easiest crock recipe I know is meat and BBQ sauce. : )
Great idea for the recipe submitted twice, I like to dredge the chicken first in taco seasoning, and then do as their recipe says.
I have made three crock pot meals this week and my favorite is king ranch chicken which includes cooked chicken, tomatoes, cream of chicken, chicken broth, cheese and fritos. I served over rice because it was a little liquidy.

Although I’m a vegetarian, I make shredded pork tacos for our meat-eating guests. So simple and delicious (I’m told): A pork shoulder or butt, browned in oil and garlic for about 8 minutes. A can of jalapenos, a chopped onion, and a quarter-cup of water in the crock pot. Deglaze the pan you browned the pork in and add that liquid to the crock pot on top of the meat. Cook on high for six hours, then reduce to low for anywhere from 2-6 hours depending on your schedule, then to Keep Warm. We serve it with tortillas, cheese, salsa, rice, and beans. (Most of which we pick up at the local taqueria. Easy as can be.

I use my crock pot all the time to let my homemade bread rise. This is really helpful in the winter when my house is too cool for it to rise properly. I turn it on the the lowest setting put a towel inside and then set my loaf pan in. Sure would like to win, thanks for the opportunity.

I LOVE using the crock pot for dinners! My favorite is Chicken breasts in the bottom, slice of onion on top, Tbsp. Ketchup on each breast, then Tbsp. of brown sugar, then lemon juice over all of it, cover and slow cook 6-7 hours, yummy and easy!
I love to toss the ingredients for a simple beef stew in before I leave for work including beef cubes, broth, tomato sauce, potatoes and green beans. It makes the whole house smell good when we get home without heating up the kitchen in the summer.
My favorite crockpot recipe……..is crockpot meatloaf……..simple as pie just 5 ingredients…

My favorite crockpot recipe is 2 lbs. of round steak cut in strips mixed with 1-2 cans of cream of mushroom soup and 1 package of lipton onion soup mix. Cook on high for 4-5 hours and serve over wide egg noodles.

I have 3 fabulous crocks and my best tip is use the liner bags for the quickest clean-ups
My best crock pot tip: Put your ingredients in the crock pot the night before. Refrigerate. Next morning take the pot out of frig, into the crock pot and turn it on. Dinner is ready when you return from work. No morning prep.
